Perfect for the cold weather.
3 tablespoons butter
2 ( 14.5 oz cans diced toms )
1/4 teaspoon dried tyme
2 cups chicken broth
1/4 teaspoon baking soda
3/4 cup heavy whipping cream
1/4 teaspoon cayenne
pinch of salt / pepper
1. In large saucepan, melt butter and add shallots. Cook slowly for ten minutes or until browned.
2. Add Toms, tyme,and chicken broth. Bring to simmer and cover for 20 minutes.
3.Turn off the heat and puree the mix with a hand held blender, you really got to make it smooth or else it ends up chunky .
4. Add baking soda, cream and cayenne. ( mix again )
Add salt and fresh ground pepper to taste.
Goes great with grilled cheese on a rainy day.
